Khajoor - A Sweet Snack :
"Khajoor" refers to a sweet and crispy deep-fried snack, which is similar to Thekua but might have some variations in ingredients and preparation.
Ingredients:
- 1 cup all-purpose flour (maida)
- 1/2 cup grated jaggery or sugar (adjust as per your preference)
- 2 tablespoons semolina (sooji)
- Dry fruits and coconut powder
- A pinch of baking soda
- 1/4 teaspoon cardamom powder
- 1/4 cup milk (approximately)
- Ghee or oil (for deep frying)
Instructions:

In a mixing bowl, combine all-purpose flour, grated jaggery (or sugar), semolina, dry fruits and coconut powder, cardamom powder, and baking soda.

Gradually add milk to the mixture and knead it into a stiff dough. The dough should not be too soft.

Cover the dough with a damp cloth and let it rest for about 15-20 minutes.

Heat ghee or oil in a deep frying pan over medium heat.

Take a small portion of the dough and roll it into a thin disc or any desired shape. You can use a rolling pin and some dry flour to roll the dough.

Carefully slide the rolled Khajoor into the hot ghee or oil and fry it until it turns golden brown and becomes crispy.

Remove the fried Khajoor from the oil and place it on paper towels to remove excess oil.

Repeat the process with the remaining dough.

Allow the Khajoor to cool completely before storing them in an airtight container.
