Instructions:

  1. In a large bowl, mix the cooked rice with water, enough to submerge the rice. The ratio of water to rice can vary based on your preference, but it's usually around 1:2. Let the rice soak in water for a few hours or overnight. This process allows the rice to ferment slightly, giving it a tangy taste.

  2. After the soaking period, add curd (yogurt) to the rice and mix it well. The amount of curd can be adjusted to achieve the desired level of sourness.

  3. In a separate pan, heat a little oil. Add cumin seeds, mustard seeds, curry leaves, green chilies, grated ginger, and crushed garlic. Sauté these ingredients until the spices release their aroma.

  4. Add the sautéed spices to the rice mixture and mix everything thoroughly. Add salt to taste.

  5. You can serve Pokhal Bhat immediately or let it sit for a while to allow the flavors to meld together.
