Mumbai best local Vada Pav

Vada pav, alternatively spelt wada pao, is a vegetarian fast food dish native to the Indian state of Maharashtra. The dish consists of a deep fried potato dumpling placed inside a bread bun sliced almost in half through the middle. It is generally accompanied with one or more chutneys and a green chili pepper.

Vada Pav is a popular Indian street food originating from Mumbai, consisting of a deep-fried potato dumpling (vada) served in a bread roll (pav) with various chutneys and spices. Here is a recipe for making Vada Pav at home:

Ingredients: For the Vada:

  • 4 large potatoes, boiled and mashed
  • 1/2 cup chopped onion
  • 1/4 cup chopped coriander leaves
  • 1 teaspoon grated ginger
  • 1 teaspoon grated garlic
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Oil for frying

For the Batter:

  • 1 cup chickpea flour (besan)
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • Salt to taste
  • Water as needed

For the Chutney:

  • 1/2 cup grated coconut
  • 1/4 cup roasted peanuts
  • 2-3 green chilies
  • 1 tablespoon chopped coriander leaves
  • Salt to taste

For Assembling:

  • 4 Pav buns
  • 4 tablespoons butter
  • 4 tablespoons green chutney
  • 4 tablespoons tamarind chutney
  • 1 onion, thinly sliced
  • Chaat masala to sprinkle on top

Instructions:

  1. In a pan, heat 2 tablespoons of oil and add cumin seeds and mustard seeds. Once they start to splutter, add the chopped onions and sauté until golden brown.

  2. Add the grated ginger, grated garlic, turmeric powder, red chili powder, and salt. Mix well and sauté for a minute.

  3. Add the mashed potatoes and chopped coriander leaves. Mix well and cook for 5-7 minutes on medium heat until the mixture is well combined.

  4. Let the potato mixture cool and shape it into medium-sized balls.

  5. In a bowl, mix together the chickpea flour, turmeric powder, red chili powder, and salt. Add water as needed to make a thick batter.

  6. Dip the potato balls in the batter and coat them evenly.

  7. Heat oil in a pan for frying. Once hot, add the coated potato balls and fry until they are golden brown and crispy.

  8. For the chutney, blend together grated coconut, roasted peanuts, green chilies, chopped coriander leaves, and salt. Add water as needed to make a smooth paste.

  9. Slice the Pav buns and spread butter on them. Toast them on a griddle until they are golden brown.

  10. Spread green chutney and tamarind chutney on the inside of the Pav buns.

  11. Place a fried potato ball (vada) inside the Pav bun and top with thinly sliced onions and a sprinkle of chaat masala.

  12. Serve hot with additional chutneys on the side.
