Jharkhand Special Madua (Finger Millet Flour ) Roti - Rich in Nutrients :

In Jharkhand, "madua roti" or "mandua roti" is a popular traditional dish made from finger millet flour.  It refers to a traditional flatbread made from the grain called "madua" or "mandua" (finger millet in English), which is also known as "ragi" in some parts of India.Mandua or finger millet is a highly nutritious grain that is rich in dietary fiber, protein, and essential minerals. Here's a basic recipe for making Madua Roti in the Jharkhand style:

Ingredients:

  • 1 cup madua (finger millet) flour
  • Water (as needed to make the dough)
  • A pinch of salt (optional)
  • Ghee or oil (for cooking)

Instructions:

  1. In a mixing bowl, take the madua flour.

  2. If desired, add a pinch of salt to the flour for taste. This step is optional, and you can omit the salt if you prefer.

  3. Slowly add water to the flour while kneading the dough. Start with a little water at a time and keep kneading until you achieve a smooth and pliable dough. The consistency should be similar to that of chapati dough.

  4. Cover the dough with a damp cloth and let it rest for about 15-20 minutes. Resting the dough allows it to become more manageable and helps improve the texture of the rotis.

  5. After resting, divide the dough into small equal-sized balls. Roll each ball between your palms to make them smooth.

  6. Dust a rolling surface with a little flour and take one dough ball. Roll it out into a circular disc using a rolling pin. The roti should be approximately 6-7 inches in diameter, but the size can vary according to your preference.

  7. Heat a tawa or flat griddle on medium-high heat. Once the tawa is hot, place the rolled-out roti on it.

  8. Cook the roti on one side until small bubbles start to form on the surface. This indicates that the bottom side is cooked. You can apply ghee or oil on the top surface if you prefer. Remove the cooked roti from the tawa and place it in a covered container to keep it warm.

  9. Repeat the process with the remaining dough balls until all the rotis are cooked.

Madua roti is now ready to be served! In Jharkhand, it is often enjoyed with ghee, curries, lentil dishes, or other traditional accompaniments.
