Aloo Paratha - Aloo paratha is a popular Indian breakfast, flatbread stuffed with a spiced potato filling. It is a delicious and fulfilling dish that is commonly enjoyed for breakfast or as a main course. Here's a simple recipe to make aloo paratha:

Ingredients:

  • For the dough:

    • 2 cups whole wheat flour
    • Water (as needed)
    • Salt (to taste)
  • For the potato filling:

    • 3 medium-sized potatoes, boiled and mashed
    • 1 small onion, finely chopped
    • 2 green chilies, finely chopped (adjust to taste)
    • 1 teaspoon ginger paste
    • 1 teaspoon cumin seeds
    • 1/2 teaspoon red chili powder (adjust to taste)
    • 1/2 teaspoon garam masala
    • Fresh cilantro leaves, finely chopped
    • Salt (to taste)
    • Ghee or oil (for cooking)

Instructions:

  1. In a mixing bowl, combine the whole wheat flour, salt, and water. Knead well to form a smooth and pliable dough. Cover the dough and let it rest for 15-20 minutes.

  2. Meanwhile, prepare the potato filling. In a separate bowl, combine the mashed potatoes, chopped onion, green chilies, ginger paste, cumin seeds, red chili powder, garam masala, cilantro leaves, and salt. Mix everything together until well combined.

  3. Divide the dough and the potato filling into equal-sized portions. Take one portion of the dough, dust it with flour, and roll it out into a small disc.

  4. Place a portion of the potato filling in the center of the disc. Bring the edges of the disc towards the center, sealing the filling completely. Flatten the stuffed dough with your hands and dust it with flour.

  5. Roll out the stuffed dough gently into a round paratha, ensuring that the filling doesn't come out. Repeat the process with the remaining dough and filling.

  6. Heat a tawa or griddle over medium heat. Place the rolled paratha on the hot tawa and cook for a minute or until small bubbles start to appear on the surface.

  7. Flip the paratha and spread some ghee or oil on the cooked side. Flip it again and apply ghee or oil on the other side. Cook the paratha until both sides are golden brown and crispy.

  8. Remove the aloo paratha from the tawa and serve it hot with yogurt, pickles, or any chutney of your choice.
