Ingredients:

  • 1 cup kulthi dal (horse gram)

  • 1-inch piece of ginger, grated
  • 2-3 green chilies, slit (adjust to your spice preference)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds

Instructions:

  1. Rinse the kulthi dal under running water until the water runs clear.
  2. In a pressure cooker or a pot, add the washed dal and 3 cups of water.
  3. If using a pressure cooker, cook the dal for about 4-5 whistles. If using a pot, bring it to a boil and then let it simmer until the dal becomes soft and cooked. It may take around 30-40 minutes on the stovetop.
  4. In a separate pan, heat oil or ghee over medium heat. Add cumin seeds and let them splutter.
  5. Add the chopped onions, minced garlic, grated ginger, green chilies and chopped tomatoes. Sauté until the onions and tomatoes turn golden brown.
  6. Once the dal is cooked, add the sautéed onion mixture, turmeric powder, and salt to the dal. Mix everything well.
  7. Simmer the dal for a few more minutes so that the flavors meld together.
