Litti Chokha from Bihar and Jharkhand 

Litti Chokha is a traditional dish from the Indian state of Bihar. It is a popular and flavorful dish enjoyed by people in Bihar, Jharkhand, and parts of Uttar Pradesh. Litti is a wheat-based dough ball stuffed with a spiced mixture, usually made from roasted gram flour (sattu), along with herbs and spices. Chokha refers to the side dish made with roasted and mashed vegetables.

Litti is traditionally cooked over a coal or wood-fired oven called "chulha," but it can also be baked or cooked on a tawa (griddle) or in an oven. The litti is roasted until it turns golden brown and gets a smoky flavor. It is usually served hot with a generous serving of ghee (clarified butter) on top.

Here are the recipes for Litti and Chokha:

Litti Recipe:

Ingredients:

  • 2 cups whole wheat flour
  • 1 teaspoon salt
  • Water (as needed)
  • 1 cup roasted gram flour (sattu)
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon ajwain (carom seeds)
  • 2 tablespoons finely chopped onions
  • 2 cloves garlic, minced
  • 2 green chilies, finely chopped
  • 2 tablespoons chopped coriander leaves
  • Salt to taste
  • Ghee (clarified butter) for serving

Instructions:

  1. In a mixing bowl, combine whole wheat flour and salt. Gradually add water and knead to form a smooth dough. Cover and let it rest for 30 minutes.
  2. In a separate bowl, mix roasted gram flour (sattu), roasted cumin powder, ajwain, chopped onions, minced garlic, green chilies, coriander leaves, and salt. Mix well until all the ingredients are combined.
  3. Divide the dough into small portions and roll each portion into a small disc.
  4. Place a spoonful of the stuffing mixture in the center of each disc. Bring the edges together and seal it to form a ball.
  5. Preheat the oven to 180°C (350°F). Alternatively, you can cook litti on a tawa (griddle) or over a coal-fired oven.
  6. Place the stuffed littis on a baking tray and bake for about 25-30 minutes or until they turn golden brown. If cooking on a tawa, cook the littis on low heat, turning occasionally, until they are evenly cooked and browned.
  7. Once cooked, remove from the oven or tawa and serve hot with a generous drizzle of ghee.

Chokha Recipe:

Ingredients:

  • 2 medium-sized brinjals (eggplants)
  • 2 medium-sized tomatoes
  • 2 medium-sized potatoes
  • 1 medium-sized onion, finely chopped
  • 2 green chilies, finely chopped
  • 2 tablespoons chopped coriander leaves
  • 1 tablespoon mustard oil
  • Salt to taste
  • 1 teaspoon red chili powder
  • 1 teaspoon roasted cumin powder

Instructions:

  1. Prick the brinjals, tomatoes, and potatoes with a fork. Roast them on a direct flame or in an oven until the skin is charred and the vegetables are soft.
  2. Remove the charred skin from the roasted vegetables and mash them well in a bowl. Discard any excess liquid.
  3. Add finely chopped onions, green chilies, coriander leaves, mustard oil, salt, red chili powder, and roasted cumin powder to the mashed vegetables. Mix well until all the ingredients are combined.
  4. Adjust the seasoning according to your taste preferences.
  5. Serve the chokha alongside hot littis. You can drizzle some more mustard oil and garnish with coriander leaves, if desired.
